What Is Sukang Waray?

Sukang Waray is a traditional Filipino vinegar made from the fermented sap of coconut blossoms. Hailing from the Waray-speaking regions of Samar and Leyte, this vinegar is known for its mild, natural sweetness and balanced acidity.

The name is simple: "Suka" means vinegar in Filipino, and "Waray" refers to the Waray people of Eastern Visayas.

How It's Made

Sukang Waray starts the same way as coconut wine (tuba) and coconut nectar — with the fresh sap of coconut blossoms. Expert farmers climb coconut trees daily to collect the sap by hand. The sap is then left to naturally ferment, transforming into a clean, tangy vinegar with a distinctive character.

Unlike mass-produced vinegars, traditional Sukang Waray is unfiltered and unpasteurized, retaining the natural enzymes and beneficial compounds from the coconut sap.
