From Farm to Bottle: The Story Behind Axel Farm Vinegars

Every bottle of Axel Farm vinegar begins the same way — high up in a coconut tree in Talalora, Samar, under the early morning sun.

The Farmers

Our story starts with the mangingisda ng niyog (coconut farmers) of Samar. These are multi-generational farming families who have been tending coconut groves for decades. Each day, they climb coconut trees by hand to collect the fresh sap from coconut blossoms — the same sap used to make tuba, coconut sugar, and our vinegars.

It takes skill, strength, and courage to climb a 40-foot coconut tree with nothing but a rope. But for our farmers, it's a craft passed down through generations.

The Sap

Coconut sap is collected at dawn and late afternoon, when the sap flows most freely. The farmers make a small cut in the coconut flower stalk and position a container to catch the dripping sap. A single tree yields about 1-2 liters of sap per day.

This sap is naturally sweet, rich in nutrients, and packed with beneficial amino acids, vitamins, and minerals.

Traditional Fermentation

Once the sap reaches our facility in Talalora, it undergoes natural fermentation. No artificial yeasts, no accelerants — just time, patience, and the natural yeasts present in the air and on the coconut blossoms.

The fermentation process converts the natural sugars into acetic acid, creating the tangy, complex flavor profile that makes our vinegars unique. Depending on the product, this process takes several weeks to months.

Small-Batch Production

Unlike large commercial vinegar producers, we work in small batches. This allows us to:

  • Monitor quality — every batch is tasted and tested
  • Preserve nutrients — gentle processing keeps beneficial compounds intact
  • Maintain tradition — we use time-honored fermentation methods
  • Support farmers — small-batch means consistent, fair income for our partners
